It was a bittersweet episode for the guys – bitter because they were in studio when they really wanted to be out there for the first day of turkey season. However, it was sweet because First Coast fishing legend Capt. Dennis Young stopped by the studio to tell some captivating tales about fishing the First Coast since 1972 (the great white stories alone are worth a listen). He also talked with the guys about the state of First Coast fishing today, and what needs to be done to preserve it for future generations. Here’s your Kirbyco Builders Inc. cooking tip of the week: Shrimp Scampi! 1 lb shrimp peeled deveined 1 sweet onion Large clove of garlic 1/4 cup Stick butter White wine 1/2 & 1/2 cream Old bay seasoning 1 lemon Sauté onion in a large skillet with a couple tablespoons of butter till translucent and remove from heat. Place onion in a bowl off to the side. In the same pan sauté the garlic on low heat until cooked with a couple of tablespoons of butter n remove from heat and place in a bowl off to the side. Take two more tablespoons if butter and place in pan until melted and slightly simmering careful not to burn it. Put a few shots of wine in with the butter and gently scrap the pan to deglaze it. This accomplished lower the heat to continue to cook and drop in a 1/4 stick of butter. Add shrimp and sprinkle with Old Bay . As shrimp begin to turn pink on one side add onions and garlic back in with a shot of wine. Turn the shrimp and be careful to not overcook them. Add a few squeezes of lemon and as it simmers slowly add a 1/4 cup of 1/2&1/2 to them. Stir in the cream and Reduce heat to warm and serve. Facebook…

Remove the roast from the oven and shred using two forks (If the roast is not pulling apart easily, put it back in the oven for 30 min). Raise the oven heat to 425. It was a labor of love for Capt. Kevin and Capt. Kirk in the wake of Valentine’s Day, as they handled show responsibilities. Jeff was away in Charleston, SC doing some OSR at the Southeastern Wildlife Exposition, commonly known as SEWE. As most folks know, Capt. Kirk grew up in those parts, so he had some insight into the town, the event, and all the great happenings there. Good thing they were inside, because the outside was no place to be at all. After a downright frigid week, the headline was all about the cold, the snow, the ice, and everything else. Cold. That’s the word. As is often the case, the weather becomes a major source of conversation here on the First Coast, and this episode is no different. With a NASTY bit of weather on the way, the guys talked about all kinds of things associated with doing the outdoor thing in disturbingly less-than-ideal conditions. But even if the cold was coming, there was a great opportunity to warm your heart during the show, as the guys welcomed in Annie Tuttle, Executive Director of the Community Hospice and Palliative Care Foundation of Caring.
