McLaughlin had planned to open his taco shop in July 2020, but sourcing equipment, finding tradespeople to commit to the job, ever-evolving Covid protocols and regulations, supply chain disruptions, skyrocketing food costs and a restaurant staff shortage hampered his efforts.
